So I went back to the village. Back to our Tharparkar cows — desert-bred, free-grazing, A2 by nature. Back to the Bilona method — curd churned by hand, butter simmered slow, nothing added, nothing taken away.

Most store ghee is made from cream, in factories, often blended with vegetable fat. Ours is made from curd by hand, in small batches, from a single Tharparkar herd in Rajasthan. You can taste the difference in the first spoon.
Yes. Tharparkar is a native Indian breed that produces milk with the A2 beta-casein protein, which many find easier to digest than the A1 milk common in hybrid breeds.
